Toscano - hard ripened, sheep milk - Approx 200g
Toscano is the first cheese that Monforte ever made, modeled after a Tomme de Savoir, it's a wild aged firm sheeps cheese. It's running acid adds bite to the tanginess of the sheeps milk. The rind is brushed and while edible will have a strong, musty flavor that might be too strong for some.
